Recently, my husband, our eldest daughter and I have been on a diet. Oh, how I hate that word. We have changed the way we are eating; are fueling our bodies. We have been low carb, high fat eating (LCHF). And it is good! We have been eating well, stay full longer, have more energy, no cravings, and we have been losing weight.
We started with recipes from the Dietdoctor.com website. When trying new recipes, especially those that are changing the way you eat, it is best to stick to the plan, er, uh, recipe. The recipes have been delicious. Some have come from bloggers — one of my favorite recipe sources, because I know most of us only share what we eat and enjoy.
One of our traditions in celebrating birthdays is the birthday person choosing our meals for the day. That same eldest daughter chose one of those delicious recipes from Dietdoctor.com, Cheese-Filled Chicken Breast. The recipe calls for 4 chicken breasts to make 4 servings. Well, the chicken we have been buying will not take 4 breasts to even make the 8 servings I typically prepare. The boneless, skinless chicken breasts from Zaycon Fresh are at least 1 pound per breast half (most recipes referring to a breast are actually referring to the half breast). Our package of 10# would sometimes have only 3 whole breasts in it, and still weigh in at approximately ten pounds. That is impressive!

I am so proud of my daughter. She is a carb-lover like me, but we have done very well sticking with our self-imposed limits on carb intake. She could have chosen any number of meals for her birthday dinner, but she chose this low carb dish, not just because it is the healthier option, but because it is her (current) favorite. The recipes we have been making have been so good, it is not unusual to have a new favorite each week.
As we become more familiar and comfortable with the LCHF, also called ketogenic way of eating, we will be preparing and sharing more recipes of our own creation. This way of eating even fits with the uber-popular (at least among us homeschool-moms-of-many) Trim Healthy Mama way of eating. THM alternates fueling with carbs and fats, but never both in the same meal. Not to say the S(atisfying) meals have 0 carbs, but the aim is for very low. The few times we have enjoyed E(energizing) meals, the enjoyment was short lived. For the next day or two, we have felt bloated and draggy, amongst other complaints. This has just reinforced that our bodies aren’t ready (yet? ever?) for alternating fuel types. Maybe I’ll feel good about enjoying a bowl of steel cut oats for breakfast, but I am nearly ready to say then again, maybe not. For a reform(ing) carb-lover that is huge!
